This healthy recipe is dairy free & does not require an ice cream maker (although I am sure this would make it easier).

Homemade Vanilla Bean Ice Cream
(I know this post would be better with a photo but I have ran out of time. I’ll add one when I make them at Christmas time).

Ingredients
1 cup of RAW cashews
1/2 cup filtered water
1/4 cup of Agave Syrup (or honey)
1 Vanilla Bean

Method
1. Mill/Pulse/Blitz (whatever your food processor calls it) the cashews until they resemble a fine powder
2. Add the water & Agave Syrup, & add the scrapings of the vanilla bean
3. Blend in the food processor, starting slow & gradually increasing speed to top level. Blend until smooth & creamy (depending on your blender this may take a few minutes)
4. Pour the mixture into a bowl. Give it a really good stir with a fork, then put in the freezer uncovered
5. Remove & stir every hour until it resembles the ice cream consistency you’d prefer to serve/eat it at. This may take 3-5 hours.

Extremely yummy homemade dairy free vanilla bean ice cream! Seriously even the kids love it.
